Quintessa Wine Dinner

Join us in our Upper Deck for a five-course dinner paired with wines from the Quintessa portfolio. Each course is designed to highlight the depth and character of Napa and Sonoma’s most respected wines.

MENU 

First Course: Chilled Blue Fin Crudo

Scented with lemon oil, yuzu kosho, shaved fennel, chive blossoms, and puffed rice

Wine Paring: Flowers Chardonnay, Sonoma Coast 

2. Second Course: Lobster and Sweet Corn Risotto

Butter-poached Maine lobster, sweet corn, Meyer lemon zest, and tarragon

Wine Paring: Illumination, Napa-Sonoma White Blend 

3. Third Course: Grilled Lamb 

Served with roasted hen of the woods, cured egg yolk, dried cherry, and rosemary jus

Wine Paring: Leviathan, Red Blend 

4. Fourth Course: Coffee and Cocoa-Rubbed Ribeye Cap

Espresso-cocoa crusted, bone marrow bordelaise, pommes anna, charred broccolini

Wine Paring: Faust The Pact, Coombville Cabernet 

5. Cheese Course:

36-month Parmigiano Reggiano with aged balsamic and Marcona almonds

Wine Paring: Quintessa, Red Blend
